Carob trees (Ceratonia siliqua) grow in the Mediterranean countries. Seeds from carob fruits are turned into carob flour used as a stabiliser and a thickening agent in foods.

Carob flour is a stabilising and thickening agent with a neutral taste. It is a carbohydrate extracted from the fruit seeds of carob trees (Ceratonia siliqua) that grow in the Mediterranean countries where their fruits have been used for culinary purposes since ancient times. Carob flour is used as a stabiliser and a thickening agent in foods.

Carob may be used for thickening baby formula or breast milk to prevent or minimize regurgitation. Carob may also be used for making dough softer and more supple.

Recipe for baby formula

Use 1 g (½ tsp) of carob for 200 ml baby formula
1. Put the amount of water for the formula into a pot and bring it to the boil
2. Remove the pot from the heat
3. Dissolve the corresponding amount of carob flour in a little cold water and whisk it into the boiling water
4. Cool the thickening to app. 40 degrees 
5. Whisk the baby formula into the thickening
6. Pour the mixture into capped bottles and put them in the refrigerator
