Cleavers are not a favourite with gardeners - but like stinging nettle the herb has its upsides. It has a mild taste resembling pea shoots. It may be eaten as rawfood; however, most of the plant is covered by small rather irritating hairs so most often it is used for cooking.
When fresh, leaves and shoots may be used for salads, shoots for stews, dried and roasted seeds for coffee replacement and stems for soup. Dried cleavers may be used for a nice cup of herbal tea.
