Ash is a remote cousin of the olive tree - both belong to the Oleraceae family. Several varieties of ash exist, but seen from a herbal perspective the interesting one is Fraxinus excelsior. If you are fortunate to have healthy ash trees in your garden, you can pick the leaves in late spring or early summer when they are covered by a thin 'slimy' film and have a sweet smell. Use leaves for tea - fresh or dried.
