Recommended use:. Use the herring spice mix in one of two ways:
1) Dissolve the spice mix in the salt and sugar pickle and pour it over fresh herrings (shiny with a red palate). NOTE: Do not use summer herrings.
2) If you use pre-pickled herrings: separate the herrings from the pickle and cover them with spice mix. Pour back the pickle and refrigerate for 1-2 weeks (the longer you leave the herrrings, the stronger the taste).
