Iceland moss
Iceland moss (Cetraria Islandica) has a long history of use as food and as a health-promoting plant in Iceland, Nordic countries, Ireland and the US.
In biological terms, iceland moss is lichen - a symbiosis between algae and fungi. It grows wild in deserted areas of Iceland. It is edible; however, its cetraric acid content makes it bitter - which is the aspect that makes it so interesting. The bitter substances promote digestion and has a soothing effect on the intestines. This is a unique - and important - combination of characteristics.
