Recommended use:. Use for bread and porridge.
Porridge: 1 part Jaws, 2 parts water. Leave ingredients to soak overnight. Boil for app. 5 minutes. Enjoy hot or cold - try adding apple bits or dried fruit.
Jaws is a great cold-milled mixture of wheat, rye, barley, oats, millet, sesame seeds (from Africa) and buckwheat - perfect for porridge and bread. Try, e.g., Jaws soft rolls:
Jaws soft rolls
42 g organic yeast
5 dl lukewarm water
1 tsp organic salt
1 tsp organic cane sugar
2 dl organic virgin olive oil
250 g Jaws
250 g organic hazelnuts
250 g organic wheat flour
Dissolve yeast in lukewarm water. Add salt, sugar, olive oil and Jaws mixture and stir well.
Chop and add hazelnuts.
Add wheat flour until the dough is smooth and has a "shiny" surface - you may not need all of the flour.
Let rise at room temperature for 45 minutes.
Make soft rolls from the dough and let them rise for another 15 minutes.
Brush rolls with water, milk or whisked eggs.
Bake in a pre-heated oven at 200oC for 15-18 minutes.
5 dl water
5 g yeast
200 g organic cottage cheese
½ tsp Maldon salt
1 tbs honey or cane sugar
2 tbs virgin olive oil
450 g Jaws
app. 600 g organic wheat flour
Dissolve yeast in lukewarm water.
Add cottage cheese, salt, honey and oil.
Add Jaws mixture. Knead wheat flour into the dough until the dough no longer sticks to the bowl.
Let rise under cover to double size (app. 30 minutes).
Put the dough in a greased bread pan or on a baking sheet. Let it rise for another 10-15 minutes.
